Salsa

This recipe is designed to use fresh, very ripe tomatoes.
For Chipotle Puree, put a can of Chipotles in Adobo Sauce in the blender and puree into a paste. It can be kept in a jar in the refrigerator indefinitely.

8 fl oz Tomato Sauce
8 oz Tomatoes, diced
2 Tbsp Tomato Paste
2 tsp Chipotle Puree
1 oz Red Onion, finely minced
2 Tbsp Cilantro, finely minced
1 Tbsp Serrano Pepper, finely minced
1 clove Garlic, finely minced
1/4 tsp Cumin Powder
1/2 tsp Salt

Serve chilled with tortilla chips
